The average restaurant doesn’t have a sommelier and they store their wholesale wine wherever they can find the space that’s why reds are usually too warm and whites usually too cold. My 13 year old son knows more about wine service than most of the wait staff I’ve come across and I’ve found better quality glassware at Target than the wholesale glassware found on the average restaurant table.
